Would I be correct In thinking.

11421337570 = GS 80/100 none oil cooler filter (ox-37)

11421337575 = GS 80/100 with oil cooler filter (ox -36), but can also be used on R100R Classic.
Also does the black flat surfaced "O" ring get used that comes In the box ?

Is the difference between the two filters just that one folds In half and one does'nt ?
Different lengths/diamter perhaps ?

The filters are different lengths. The filter for the oil cooler bikes doesn't have a rubber buffer on one it it relies on the O ring in the cover.

Anton Largiadier has a decent website listing all the details - http://www.largiader.com/tech/filters/ the comments he makes about the cannister depth and shimming are important,
