Those should fit the bill.
With regard to building the wheels,
It’s not overly difficult,but I’d get them to someone who has experience of them.
Sometimes they can be a bit of a bugger to get them running true(ish).
The rim is very rigid ,if it’s distorted or has a wobble you cannot pull them straight with the spokes as you might with a conventional set up.
If your chap isn’t happy to do them I’ll put you in touch with my wheel builder.
I normally strip them for her,vapour blast the hub and fit new bearings,then let her polish the rim and build it.
