Hi Tom, I bought a '04 Boxercup the end of April.
I previously had (actually I still have it... sort of...) an R1150R that I absolutely loved, but I always wanted to move to a sport touring bike (I wanted to get an S for a couple of years).
I always had silver cars, silver bikes... got bored and decided to buy the flashy boxercup version.

It's an honest sport touring bike. The torque is at roughly 1000rpms more than on the standard GSs and Rs, the fairing does an excellent job for air protection, and lets you drive at a much faster pace than, say, an R1150R (not sure about a GS).
Yes, it's not comfortable as your previous GS. In case you plan to travel long distances you can move the bars in the "touring" higher position. Some bikes are already like that.
You'll have two big panniers that is quite a lot of luggage IMHO, I don't think a tank bag is suitable for the S since the riding position you will have (basically with the chest on top of the tank).
Optionals?
The only thing worth is buying a couple of Ohlins.
Everything else comes second, but laser exhaust and an Y will give her a nice deep sound (like a gruntling hog as a mate once said

BTW, I had the choice to buy either a 12S or the 11S... I decided for the latter... had "stronger feelings" for it
