Here is my GS on which I've done 5000 miles since March. I bought as a temporary measure due to a delay in the release of the RS which I was supposed to get last March, but have now returned to standard spec as in second picture, and traded in - available for sale at Pidcocks BMW Nottingham.

Very nice bike, but looks like it could be difficult to mount and dismount with the luggage in that position - why no panniers?

Not really. You just stand facing the bike and hurdle over the seat.
