SP3 upgrde?

What are the chances of being able to upgrade the processor in an SP3?

Zero to nil. The newer processors that followed the SP III are Dragonball ARM or RISC devices - they need different code than the SP III processor. So, even if you invested hundreds of hours and thousands of $ (or ₤, or €) and did a successful processor transplant, the thing wouldn't work, because you would need Garmin to write custom software for it.
