Switching off ABS

I have a 2008 F800GS and do a lot of off road riding. I know how to switch off the abs by holding the button for a few seconds, and I know that the abs stays off between restarts if you stall the engine or cut power or drop the stand whilst in gear etc. And I also know that the abs switches back on if you use the key to stop the engine.

However, a few times the abs has stayed off, even though I use the key. It happened a few weeks ago so I studied what was happening... In summary, turned the ignition on and I have a constant abs light. Ride and kill the ignition and still the abs stays off. After I few stops and starts I turned the abs on with the button and it is back to normal.

Each time this has happened it's been during off road riding when I'm always switch the abs off.

My question is... How did I get the bike to keep the abs off like this? I really want to know because sometimes I really want the abs to stay off.

I'm pretty sure it was not mud on the sensor, because this starts with the abs light flashing before the abs light goes solid.
