Thinking of planning a 5 day jaunt round mid / north UK in September

I have made many trips in the past to he north of UK and more or less know what I am looking for but the problem becomes you get very set in your ways so inspiration from others is always nice to help maybe build something different.
Trip late September, Ferry from Rotterdam to Hull Saturday evening say 20th or 27th September. Return leg Thursday following.
I tend to try and ride between 260 and 300 km per day on mainly A and B roads. No goat tracks or major roads.
The National parks are always lovely especially the North Penines which is a favourite and also the Borders.
Accommodation - preference pubs with rooms preferably in small rural villages. Prices in UK for good pub accommodation has gone a bit nuts recently. I remember when 100 quid a night would do you right but an old favourite in Levisham or Romaldkirk are hitting 200 and even more.
Interested to hear from those that know the area better than me for tips and advice. I usually use the good Pub guide to try and find accomodation.
Group size 2-4 max. ideally 3 for such trips.

this is a favourite pub in Brampton, a small town (big village really) just in England near Hadrian's Wall.

I also like Reeth in the middle of the Yorkshire Dales. Stayed in the Black Bull and Kings Arms but the latter is closed currently and has a for sale sign from streetview last year https://maps.app.goo.gl/dABHmbbt3M4RXxxH6 - again £120 a night

I daren't look to see what the Lister Arms in Malham is charging now.
 
How about doing a motorcycle Three Peaks? The three highest pubs, England (Tan Hill Inn), Scotland (Wanlockhead Inn, half way between Glasgow and Carlisle, and the lead mining museum is there too), then Wales (The Sportsman's Arms near Llyn Brenig) the Welsh one has closed now, but it is a good road to ride the A543 and takes you down to the A5 to head east again. Corwen has plenty of places to stay. To be honest I prefer Air BnB now - I used one for the 8 weeks I was working in Preston and the chap even let me share his dinner each night that his aunt made for him, a lovely Pakistani chap and the curries were excellent, home made ones all for £30/night and I had a wide screen TV and french doors out onto a patio, all to myself. There are some great deals to be had from Air BnBers, others just take the Micky.
 
Not sure whether this would suit you, but I took some cyclists oop north a few years back and stayed at the Cote Ghyll Mill YHA. Very different nowadays, comfortable rooms, very decent price and 15 minutes from a fabulous pub with very good food.

And… it had a good drying room.
