I'm currently touring in Europe and my rear Anakee III is finished and my front is looking tired. So I'm going to replace both today before I go much further.

I have no intention to take the bike off road this year, so am thinking to ditch the trail capable tyres, and put on a 100% road biased tyre like a Michelin Pilot Sport or a Conti Road Attack.

Is there any technical reason I shouldn't put standard sports bike tyres on a GS?
 
No there isn't. The Pilot sports you suggest are up one level more than you need, try Pilot roads or Roadsmart 3's for example which are both 100% road. The more sporty a tyre is the less wet grip they have and slower warming up and probably less mileage. If you had no grip issues with the Anakee IIIs then you will be fine with any tyre you will find recommended countless times in recent tyre posts.
 
Biggest block to choice will be the 19" front wheel I imagine, but the 2 tyres given as examples above would be good choices.
 
I've just changed from Michelin Pilot Road 4 Trail tyres to Metzeler Roadtec 01's.

They are bloody awesome so far and VERY confidence inspiring.

Yes, that's proving to be the case. I've replaced the rear with a Bridgestone BT021 and it's good. But I can't find a 19" version
