My advice would be get an official invitation from a recognised travel agent and book at least 1 hotel night with them.

Then you can travel from hotel to hotel and they will register your visa for you. Make sure the first registration occurs within 3 days of arrival or you will be fined.

In respect of vehicle insurance, I got a green card from my insurer before departure and that was all i needed. The only insurance required for belarus was compulsory health insurance, as as you are from the UK you are exempt from that.
Allow about 3 hours in total to clear customs on the way in and about 2 hours on exit.
DONT lose any paperwork on your travels. I witnessed a very irate German shouting as only they can while his car was impounded because he lost his customs import declaration form.
Ukraine was visa free last year for EU citizens but I'm not sure about this year.I know that there was growing dissatisfaction on the ukrainian side with the reciprocal travel arrangements with the EU over the last two years so they may have reviewed the arrangements.Best to check with the Ukrainian embassy in UK.
