It's the signal you're after, the method of transfer can be adjusted by the hardware adaptors.

Cheaper if they leave out the recording bit, or cripple it in firmware, giving you a model number without the .i. in Canon's range for example.
google uk.rec.motorcycles, i think this came up in the past and was discussed at length.
If it's got dv-in there's a fair chance it will also support recording of an analogue signal too, but ask the retailer specifically on this. The bullet cam will be yer yellow phono composite lead and there should be an appropriate lead supplied with the camcorder to plug that in.
