have seen and spoke to a bloke who was riding a ratty 1150 with no rear can, but still with catalytic converter-his bike was not overtly noisy-mine was louder with full remus system
ah yes the old remove-the-can-and-run-on-the-cat routine!! There has been a lot of discussion on the Ducati Monster forum sites. Well, some will tell you its fine, others tell you it not. The only problem that seems to make sense is if due to the now dramatically reduced back pressure, would the engine run leaner. And if it does...can the ECU handle the difference and change the mixture accordingly or will you need to install a programable ECU...

Bits to remove would be .... everything that you could with a toolkit and then put the lid back on. Result - louder exhaust note, power perhaps but don't want to upset smoothness nor wreck the engine.
Have a look here. I've done this to my 1150 with no other mods and I am happy with it. Sounds really rather nice (very deep throb) and reduces weight by around 5kgs to offset all the extras I have added

I have read that with the smaller cat on the 1200 compared to the 1150 that it's quite a bit louder than the 1150 without the can. No personal experience though....just what I've read.
