Was at the local BMW dealership the other day having work done on my GS. I was moaning to a mechanic about rust on various setscrew heads being discoloured with rust. He said not to replace them with stainless ones because they are a ‘bastard to get out’.

Yeah. That's because they are long way apart on the periodic table, and consequently become little batteries with consequential electrolytic corrosion...only it's the internal screwthread that corroded away. That'll be the anode then.
