Finally Sorted
Firstly, thanks for all suggestions.
It seems that Windows 7 back up's are not compatible with Windows 8.1
To resolve the issue I needed to connect the external hard drive (with the back up on it) to a Windows 7 machine. Make a new folder on the hard drive that contains the original back up. Then restore the files to the new folder and hey presto. All the original files back as they were.
Connect the hard drive to the Windows 8 machine and copy/paste across.
