Anybody devised a way of covering up the Rider 2 cradle from the elements especially when the GPS unit is not fitted.

Is there any need? - thoughts please

I used a small plastic bag secured with a lazzy band, seemed to work ok.

Mine got very wet in the rain last week without the rider in place. Still works fine, but I've WD40'd the contacts just to be sure....

I'm more worried about someone undoing the RAM mount wingnut and making off with it - any ideas on preventing this?

RAM do a lockable nut. Alternatively, and far cheaper, replace the wing-nut and bolt with an Allen bolt and nut.
