Been to all the "usual Suspect Cities , and Big towns ,
I wanted to head to the Baltics , But Billie wants Sun ,
Spain is looking like its gonnie get a Touche of :Civilisation: in the near future

The answer is in your question: Stay away from big cities and towns. Go rural. Buy some Michelin maps and follow the roads with green borders on them.
The Spanish love their food and wine, so you'd have to be unlucky to end up in a village with no restuarant or bar.

Stopped in Osuna a couple of years ago. 4 beers for €5. Not on the tourist trail, but an hour or so from Seville and Granada, couple of hours from Taifa / Cordoba and Ronda. Loads of airlines fly into Malaga which is about 2 hours away IIRC. Nice quiet town near to Spains frying pan.
