I've got the Touratech tank pods on my '05 GS, but the fuel lines have degraded at the ends and now need replacing. But, I have no idea if these are a standard size or if there's likely to be a specific type.

Can I just pop into Halfords to get fuel line, or will I need to find a specialist supplier?

All things being equal you just need to match the inner diameter of the original fuel line with whatever you use as a replacement. You can use something with a known diameter such as a drill bit to poke into the old hose to measure what size it is (taking into consideration the possibility the old end has widened a tad). Thereafter, or course, you must use hose designed for petrol and it needs to be bendy enough and have enough toughness to avoid abrasion and so on as it routes from A to B. Alternatively, if you have enough length in the old pipe, just lop-off a couple of cm from the end and remake the connection?
