I mean, the GS is available in so many different colour combos and with a range of extras. Are they built to customer order like some makes of cars or do you have to pick from what stock the dealer has got or can swap with another dealer?

As Wiz said all three of the options you mentioned can apply.

Generally dealers spec thier stock bike with ABS, heatd grips as a minimum and choose what from experience thye find are the most popular colour combinations.

If you want specific options they can check stock on order both to themselves as well as other dealers and try and arrange a "swop" of one of their allocated bikes, generally ordering a specific combination will be the slowest option, eg I did not want ABS and when I ordered my bike I was given an 8 to 12 week deivery time.
