Clinging to reality by a finger tip.
Occasionally, by accident, I make all the open windows on my screen reduce in size and reposition themselves so all can be seen.

Any idea how?

You're probably hitting the roller on the mouse instead of just scrolling with it.
 
That's odd... definately F9 on my G5

There are also hotspots in 2 of the screen corners to toggle exposè (the resizing thingie).
I don't remember if these are active by default but you can alwas check:

apple menu > system preferences > exposè and spaces > "exposè" tab (left)
 
I have all 4 corners set to something different,
TL- Spaces
TR- open windows
BL- widgets
BR- screensaver

useful shortcuts, not so useful with my current supersensitive mouse
 
My top two corner resize all open windows so all are viewable on the desktop.

Lower two corners expose the desktop by pushing all window to the edges of the screen.

What does "Spaces" do???

multiple desktops, so you can use different applications on each, less clutter, easier to use.

I use it loads,
I have web & email on 1, lightroom on 2, CS3 on 3 and iphoto on 4
I really wish the work comps were macs, could flit between work and skive mode really quick!!

I do the same... the only annoying thing is Photoshop not redrawing palettes properly when moving from space to space.
It's due to Adobe's "non standard" use of the Mac GUI.
