Allow for slow road speeds. With only three days don't plan on going further south than Fez (even Fez is too far really). Concentrate on Tetouan (used to be the capital of Spanish Morocco until 1955 and has a good medina) and Chefchaouen (pretty place on western edge of Rif Mountains).

A good ride out for day 2 from Chefchaouen could be Bab Taza, R412 south to Ourtzarh, then west on the R408, then north via Teroual and Zoumi and back to Chefchaouen.
