Optimum Oil Temperature?

I have an R80Basic with a big bore kit, deep oil pan, HPN oil valve and oil cooler - much more go (it seems) than standard r100. Monday (hot day in London traffic) was the first time I had ridden it this year and the VDO oil temp gauge read 140C (max is 150C). I stopped to let it cool down. The HPN valve had opened as the radiator was hot.
I have a couple of other r100gs's but neither of them have an oil temp gauge fitted so I have no idea what is normal running temp for these things is!
Should I worry or is this the normal running temp on a hot day?

When I had the 1000 kit on mine I was given a temperature dipstick to try.(No cooler) It would run at 140 on the open road (2up and loaded). It didnt seem to matter what the ambient temp was. I ran like this for 20000km with no problems. I tried it in my 800 the other day. It only got to 120
