Does anyone know of a good reason (i.e. not "the handbook says so") why I shouldn't set a GS1200 (not Adventure) seat with the front on high and the back on low?

that's what CW recommended to me as the "only comfortable" option for a GSA.

I've got mine with front low, and rear high, no gap at the front.
 
I was advised to do that by the deler when I bought the bike new. Gives the right seat height but keeps you away from the tank. The gap is a bit unusual at first but you get used to it and not out of place with the quirkiness of the rest of the bike!
 
I have mine on the high setting at the front only, but I do not get a gap, take a look.
