Tubeless to tubed to tubless

For a forthcoming trip I'm planning on taking a couple of tubes for my 1150GSA in case of problems.

I'm assuming I'll have to rip out the valve to fit the tube and will probably destroy it in the process. So when I come to replace the tyre I'll need a valve.

If I'm right should I also carry some spare valves? if yes will I need a tool to fit them? Are all valves made equal?

Isn't this just making for more complications. you puncture a tubeless tyre and you fix it. simple. but what do you have to do if you puncture a tube? Surely this is simply making more work for yourself?

I simply can't see the logic behind this.
 
My (probably wrong) assumption is that as we'll be doing some off roading there's a chance a tyre will be torn rather than holed. A tube will fix that but a repair won't.
