Valve clearances - hot or cold?

BMW dealer told me they have a probe which tells them if the temperature os below the threshold set in the service specifications. I would always insist valves checked cold or walk away from that dealer.
 
It's been interesting hearing what everyone thinks. I have come to the conclusion that they must have checked the temperature and it was less than the maximum allowed. I expect that if the clearance's were close then they would have used the overnight opportunity to re-check in the morning and if necessary adjust with a cold engine. Overall I have to trust the dealer don't I? They are a big, long established dealer and their reputation with me and BMW is on the line if they cut corners. Is it also possible that at 12000 mls they know that the clearances are almost always OK?
