Off road frowned upon in France, especially mountainous regions because of the "greens" and all related activities and tourism

What he said. The Vosges is considered a valuable environment and is strongly protected, local environmental groups are very active I doubt you'll find much in the way of legal trails. Penalties for ignoring access notices can be severe (including confiscation of the vehicle).

I used to be involved in an off-road group in Alsace and even a Sunday afternoon bimble in Land Rovers took weeks of paperwork and negotiation with farmers, mayors, hunters, walkers etc.

Off-roading in France is popular in the country areas but, as the others have said, you have to be 'In the know' as to where to ride and when.

What I would do is find a decent sized local dealership, especially one dealing near enough exclusively with off-road bikes (like KTM) and ask them for some ideas. You could also spend a happy half hour or two in Google; follow links however obscure. For instance, I found a Dutch bloke who seemed to be doing something.
