Two years ago i went to Crete on my Gsa. Wore leather pants which i sweated like a pig but accepted it. The best thing i ever did was wear a knox off road top with attached armour on , the one that looks like netting. I wore a t shirt over it, best thing i ever wore for the three weeks there. Dead cool.

Base layer t-shirt under armour/jacket. Long or short sleeved depending on the temperature. Lightweight wicking and quick drying underwear for socks/pants. Two pairs; one being worn, the other in my luggage/drying. Personally, I like Ex Officio stuff, mainly because of the small pack size and how quick it dries when wet. I've tried their briefs and just can't get used to them, boxers only for me.
I've found that I like knee length compression socks for full-on offroading with big Enduro boots on, but for adventure riding/touring, I just wear ankle socks. You don't feel the boots rubbing after a while.
