I agree the museum is well worth a visit if you like old cars, particularly Bugattis, it has an interesting back story as to how the Museum came into existance. Worth the detour in my opinion.

Great info fellas I might just pinch some of that lot as not too clued up on France, the few times I've tried the "pubs" are either closed when i fancy a beer or there just ain't anything to open, going to try again this year though 
I noticed last summer that loads of villages that a few years previously would have had a couple of cafes open now had none. A real struggles to find anywhere to have a break. If you enjoy very good food and very good wine you have to overnight (or preferably 2) in Beaune.

I can also recommend the self guided wine tour at https://www.patriarche.com/ - you wander about the cellars unsupervised. Activate the screens to hear the descriptions, terroir bollocks etc. Meanwhile, help yourself to as much of the wine on the table using the Tastevin provided, which you keep as a souvenir. Tiny volume but no limit on refills and some of the wines are premier crus vintages.

I have used the Ibis Beaune Centre a few times - short walk to the town centre. The hotel has a carpark but I've always left the bike parked outside the front of the hotel, it is off road.
Did you choose this place in the end? I just saw your start ´´hand´´ at point 1 in that area. If so its great. Also heading back in June. The Spa which is included in the rate is superb and the restaurant is excellent. Danger is its in the middle of the champagne area....so very tempted to stop and buy a few from the many roadside wineries.....

Vosges and the area around the route de vin and make your way back up through the Parc naturel régional de Lorraine, or through the
Parc naturel régional de la Forêt d'Orient and onto Troyes, or maybe up to Verdun from the vosges if you are into a bit of WW1 history, ask 100 people and you will get 100 different ideas, so take your pick from anyone of the above replies they are all good in there own way.
A bit further on from your point 8 - I stayed last week at Hotel Les Montagnards in the town of Morteau https://www.hotel-les-montagnards.com/. Great little place, super host who opened up his garage for keeping the bike overnight.
Very decent meal (on a Monday night) at Le Chaudron restaurant with local Morteau sausage as a speciality.
