Anyone know an easy way to identify and purchase replacement bolts? They are from the pannier rail on my gs and were a bit chewed up. Torx 25 and 30

Depends where you live.
You may have someone like Bapp for bolts locally or similar. They should be able to sort you out.

What thread are they? M5, M6 etc ?

Stainless A4 marine grade would do, sufficient tensile strength to match an 8.8 steel plated bolt.

The mothership uses slightly different pitches on many of there bolts / fixings

they may look the same .. untill you fit them

They will be standard metric thread pitch ... and of course depending on dia, there may be 3 variants (std , fine and coarse) ... but the are no "slightly different pitches" bolts / fittings made !:blast

Run a tap through any fixed female fasteners to clean up any galling or thread damage.
Use an anti seize on assembly such as Coppaslip or a dry film lubricant.
