Having just purchased a 3 year old GS1200 I am concerned about fuel consumption. It costs (at current petrol prices) about £12 to fill up, and I get about 150 - 170 miles. Is this about right?

I also have vario panniers (side and top box) and want to know if its safe to go go over (laws allowing) 80MPH - the hand book says 80 is top whack?

I don't know how much fuel your putting in it at a cost of £12 as I never can be arsed to work out what it costs per mile/litre/tank.
I put in about 20-22litres depending how low it is.
Iget 50mpg now matter how I ride it.
Have you done the fuel filler mod?
It lets you get another coupla litres in.

That seems pretty good. You're putting in c. 12 litres and getting between 57 & 64 mpg. In practice, I doubt that you're getting anything like 64 mpg unless you're riding everywhere very gently indeed. My '07 averages 47 mpg, riding anything but gently.

I can't comment on the top box as I don't have one but the most I've ever saw on my '04 bike was a GPS verified 122 mph with loaded Vario panniers, albeit unexpanded.
 
fuel, panniers and rust proofing

I am still learning the ropes so am taking it pretty steady hence high econ. I recon the panniers take some fuel up as they stick out in to the air flow. Was very impressed with what I can get in them and they don't leak.

Can you also give me any tips on anti corrosion? I use a pressure washer combined with road film remover when its dirty. I take care not to use the pressure hose under the tank and seat where the electrics are. The manual says that you should not use a pressure washer, but a mate of mine (GS rider) uses one all the time without any issues.

If we are lucky it will be that cheap.

What a shame bikes are all but impossible to convert to LPG. That's not my usual moan about bike design dogma there's just no space for the gas tank.
