As promised an update from our recent tour of northern France a few weeks ago. Again purely subjective in my view but maybe useful to others:

Hostellerie Saint Louis, Bollezeele. About 50km due east of Calais in the small village of Bollezeele. Lovely little hotel with a great restaurant and menu. Again conveient as either first or last stop for those that want to be close the tunnel or ferry.
Highlight on the map shows the area of Bollezeele

Relais des Dalles, Sassetot-le-Mouconduit. About 16km up the coast from Fecamp this really is a little gem of a place to stay. Not the cheapest though. Rooms are a bit pricier than the average but the small restaurant is amazing. If you get stuck on a day the restaurant is closed you can hop across the road the the Chateau Sisi which has an amazing kitchen with very reasonable but excellent menu! Have done both in the past and can recommend both.

Chateau de la Rapee. A pleasant quirky 19 century chateau with nice rooms and a reasonable restaurant. Stayed a few times but on hindsight probably for future will avoid. Not because there is anything wrong but the menu is about 20% higher than what I would normally pay for a nice 3 course dinner. Location is superb at the end of a quiet country lane surrounded by horses and stables.

Chateau de la Motte. A lovely hotel with gorgeous rooms and set in lovely grounds with a lake. Restaurant is less attractive with the food being a bit less worthy of the blue rating set by Logis. In the small village of Leissies close the the Belgian border.
Nice but not worth a revisit for me.

When touring in Spain, it's Paradores all the way.

In France, we always start on the Logis de France website and we've not had any disasters, and had some great stays. I love the individuality of them and there's always the chance of stumbling on a gem of a restaurant.

While I'm sure I'll miss some, here are some of the Logis hotels I can recall staying at:-

Hotel le Franco-Belge in Montherme.
Hotel l'Auzeraie in Ax-Les-Thermes. View over the hot spring and casino.
Moulin des Templiers in Jabrun. Impossible to find via country lanes. We had to stop and ask someone who, it turned out, was on her way to work there!
Grand Hotel in Mayenne - the best ever steak in pepper sauce, cooked by a chef who spent some time as a chef in Wales (Merthyr Tydfil perhaps?) and now speaks English with a comical English/Welsh accent, but boy can he cook! Mayenne is a handy place to stay for Le Mans, about an hour's ride away.
Hotel Oasis, Villaine le Juhel. Also handy for Le Mans.
Moulin des Templiers (again) in Pontaubert, near Avallon. More of a Table d'Hote than a restaurant, and the choice was "meat, fish or vegetarian." Absolutely delicious food though, and they brew their own beer.
Auberge de la Cascade, St-Chely (near Ste Enimie in the Tarn Gorge). Beautiful setting.
