I use a trigger action G clamp to hold the tyre side walls together so I can get the remaining bead over the rim.
Get some tyre fitting lube from your local car tyres shop. Don't use washing up liquid. It contains salt.

I use an Abba bead breaker together with some 12 inch irons:

I used to have one of the cheaper types with the long handle but couldn't get on with it. I can also use the Abba breaker to help hold down one side of the new tyre while I get the other side on. Also, don't skimp on the lube, something like this:
