what shall I get fancy a track day

If you're doing a trackday at Thruxton, don't forget that the surface there is Portland stone chip and is VERY abrasive on tyres. A couple of well ridden laps and your tyres will be shagged.

Been told they 'go off' quickly when pushed hard.

For a track day I would go for the Roadsmart II or the newer Bridgestone T30 (as used at Ron Haslem Race School).

Dad used to run with FIRESTONE Tyres and he was very friendly via PIES etc with the front desk, and would come back with sets and sets with names on them like HILL, FITTIPALDI, and RIUNT in white and yellow chalk on the sides.
 
I would be curious to hear what you think on them.

My bike has Touraces and whilst they are good in the dry I'm not liking the feedback in the wet. I feel the GSA (If solely road riding) is crying out for some gripper rubber with more of a curvature / surface (on the front tyre especially)

If it is a dry day then any tire will do. You will not run off the edge of the tyre. If it is likely to be wet then the PR3 or 4 would be the choice, they are much better in the wet than any tyre but create a bit of movement when in the dry. Post some pics when you've done it.
 
My comment came from the tyre fitter who has tried them on the track and suggested the tread pattern works against the PR when pushed hard on a dry surface. Must admit when it's wet I avoid tracks and mega lean angles prefer to push it in the dry. Just had a T30 put on the front and so far impressed with it.

I think i am going to miss those quike bips off road,

may do 200 miles and sell them on here milage on invioce.
