Starting to think of a slow refrb of the 100gs, starting with the spokes. how feasible is it for me to replace each spoke one at a time and then getting the wheel properly trued up?
 
I bought stainless spokes from Germany £88 for the pair delivered, vapour blasted hubs , polished the rims then it cost about £35 per wheel to be built and trued- wasn't worth diy for me!

Like NM says, chances of unscrewing the spokes is worse than slim.
Then you have to hope that nothing goes wrong while you remove and replace the spokes and that is extremely unlikely.
Then the prospect that you will be able to true the rims is probably distinctly worse than the first two possibilities, so not a project where I would hold out a lot of hope for success.
But some folks claim to have done it easily without any problems, so you might be as lucky as to live on the same planet as them!

I was planning on cutting each spoke with a Dremel and replacing them individually. However, vapour blasting the hub would be a bonus given the prices you mention. Got a source for this German spokes?

From my experience they are a nightmare!! It took me all day to remove the spokes and had to heat everyone until they were glowing hot, then hours of polishing, blasting, and building. You then still have them to true up, very tricky if you haven't done then before. Central wheels in the midlands will do them start to finish for £185 a rim ( I think from memory ) they have just started doing BMW rims. I will dig out the number if you want it?






 
For 196 quid you still have to dismantle them yourself, and polishing the hub/ rim is another 35 quid each.
And you probably have to supply and fit the grub screws yourself if you decide you want them.

There are two distinct problems when building the wheels yourself, one is assembling them and getting them true , which is difficult but not impossible.
The second is keeping the rim true while you tighten the spokes to the correct tension with your 40 quid spoke tension spanner.
Central wheel didn't offer the service for around 30 years which tells you how difficult it is.

No, central wheel do the whole lot including dismantling. Just post the rims as they are and the rest is taken care of by them.
 
Sorry,if I have it wrong but I read it as the dismantling was an extra , charged at hourly rates.
I'll go back and read it again.
FWIW I rebuilt my GS wheels using a" Radco jig" , managed to get the spokes in and the rim relatively true, but no matter what I did with the tensioning it pulled the rim out of true and I ended up paying a wheel builder to do the final tension/truing.
