It would be a good idea to try an off road school before you spend a lot of money; green laning might not be your idea of fun and this would be a cheaper way of finding out.
I wouldn't get too hung up on getting a bigger engined bike. A 250 would be a good starting point and it will manage the road sections just as well as a bigger engined bike. Most of the road work between lanes is done at 50-60mph.
