Thats easy, from a physics point of view, when you turn a bike your forward momentum keeps you upright, when you turn the contact with the ground provides the centripetal force required to force the vehicle to turn instead of carrying on in a straight line, you lean into the turn so that the top of the vehicle does not topple over the contact point on the ground.
You fell of because either the point of contact with the ground didnt provide sufficient friction for the amount of force being transmitted through it, or your forward momentum was insufficient to maintain the angle of lean being attempted.
in essence go faster or dont lean it over so far. simples
