What did I do wrong?

You actually paid someone to let you crash your bike in a field :spl1f:

:D:D:D

Next time put some weight on the outside peg. It helps with the traction and if you find yourself having to turn around on a slope the weight goes to the peg facing uphill :thumb It helps on any surface.

I love the way the bike comes around to make sure you're OK..... :D

I assume that Riderempathy is an option, flippin' clever, all this tech. :thumb2

You should do a lift and handle safe course:D

I would get your FD checked out. I have read on here that you should not let the bike run in gear when it's not under load. Probably a write off. I'll take it off your hands for a few quid and put it right. I already have the right colour twat suit 👏🏻😜😎

Thats easy, from a physics point of view, when you turn a bike your forward momentum keeps you upright, when you turn the contact with the ground provides the centripetal force required to force the vehicle to turn instead of carrying on in a straight line, you lean into the turn so that the top of the vehicle does not topple over the contact point on the ground.
You fell of because either the point of contact with the ground didnt provide sufficient friction for the amount of force being transmitted through it, or your forward momentum was insufficient to maintain the angle of lean being attempted.

in essence go faster or dont lean it over so far. simples

That's just what I thought...

I'm no expert, but the advice I got from an experienced off-roader was not to stand up on loose/slippery stuff. He said that if the bike slips and you need to "take a dab" you'll never get your foot down on time. Your left foot was still on the peg when the bike hit the ground. Had you been sitting, you probably would have thrown out your leg instinctively to keep the bike upright.

It also looks like you asked for more grip from the front than the ground could provide. If you hadn't, you wouldn't have needed to take a dab. :)

Oh dear ... simply put you had too much weight to the inside of the turn,,,the sit or to stand depends on speed and terrain watch a motocross race, trails event, or sand racing and you'll see the differences..
body weight distribution is the key when standing more upright pushes weight forward and a bent knees sitting back pushes weight back at lower speeds the body position needs to stay more in the vertical position by pushing/leaning the bike into the turn .. not you ... which is what you appear to have done in the video
